Browned Butter Roasted Potatoes with Parmesan

Ingredients:
• ¼-⅓ cup of olive oil
• 6 large cloves of garlic, finely chopped or minced
• 1 ½ teaspoons of salt
• 1 teaspoon of dried parsley
• 1 teaspoon of dried thyme
• 1 teaspoon of dried oregano
• ½ teaspoon of freshly cracked black pepper
• ¾ cup of freshly grated Parmesan cheese
• 3 pounds (1.5 kgs) of red potatoes, washed and quartered
• ½ cup of unsalted butter
• 4 tablespoons of fresh parsley, finely chopped (for serving)
